Beancurd Sticks Stir-fried with Chinese Chives Recipe
(With Dried Beancurd Sticks or Fresh Beancurd Sticks)
1 pack of AFC Fresh Beancurd Sticks or, 1 pack of AFC Dried Beancurd Sticks, soaked in water for a a few hours
3 tablespoons cooking oil
1 bunch Chinese chives, about 4 oz.
1 teaspoon light soy sauce
1 tablespoon chili oil or toasted sesame oil
Cut the fresh beancurd sticks into 1-inch segments and set aside. Or, soak the dried beancurd sticks the night before, placing them in the refrigerator in a large bowl of water.
Then, cut the soaked beancurd sticks into 1-inch segments and set aside.
Cut the chives into 1-inch segments, discard the tough tips (or set aside to use in stock.)
Heat the oil in a wok or sauté pan over medium heat until shimmering.
Add the chives and stir-fry until tender, about 1 minute.
Remove the chives from the wok.
Add the beancurd sticks and the soy sauce and stir-fry for a minute longer, or until the sticks have absorbed
all the liquid in the wok.
Add the chives back to the wok and stir to combine.
Season to taste with salt.
Drizzle with chili oil or sesame oil.
Ready to serve.
