Ingredients

  • 1 pack of AFC Firm Tofu (Choose from 3 different sizes: 14oz Organic, 19oz & 14oz) cut into 1-inch cubes
  • Bell peppers (your choice of color)
  • Mushrooms
  • Onions (your choice of color)
  • Zucchini
Marinade:
  • 1 tablespoon vegetable oil
  • 1 cup cider vinegar
  • 1 tablespoon low sodium soy sauce
  • 2 cloves garlic, crushed
  • 2 tablespoon rice wine
  • 1 small piece of fresh ginger - peeled and grated

Instructions

  1. Cutting tofu into 1-inch cubes.
  2. Heat grill to medium temp. (350°F - 450°F).
  3. Mix marinade ingredients into bowl and add tofu, let it sit for 15-20 min.
  4. Slice giant bell peppers, onions, zucchini and mushrooms into 1/2-inch  lengths.
  5. When ready, stick the vegetables and tofu through the bamboo skewer.
  6. Grill for 3-5 min.
  7. Ready to serve.
