Ingredients

  • 1 pack of AFC Firm Tofu (Choose from 3 different sizes: 14oz Organic, 19oz & 14oz)
  • 1 teaspoon chili powder
  • 1 clove garlic, minced
  • 2 tablespoons vegetable oil
  • 1/2 cup onion, diced
  • 2 stalks celery, chopped (optional)
  • 1/2 cup whole kernel corn
  • 1 can kidney beans
  • 1 can tomatoes
  • 1 quart water

Instructions

  1. In a medium bowl, cut tofu into 1/4-inch cubes and toss with the chili powder and garlic.
  2. Heat the oil in a large saucepan over medium heat, and saute the onion and celery until tender.
  3. Stir in the tofu mixture.
  4. Continue cooking about 5 minutes over low heat.
  5. Add tofu then saute and stir fry 7-10 minutes or until browned.
  6. Place on a serving plate.
  7. Mix in the corn, kidney beans, and stewed tomatoes.
  8. Add water and bring to a boil.
  9. Reduce heat to low and simmer about 50 minutes.
  10. Ready to serve.
