Ingredients

Soup Contents:

  • 1 pack of AFC Soft Tofu (Choose from 3 different sizes: 14oz Organic, 19oz & 14oz)
  • 2 Enoki mushrooms
  • 3 large Shiitake mushrooms
  • 2oz vermicelli noodles
  • 3 green onions
Broth:
  • 4 cups chicken stock or vegetable broth (for vegetarians/vegans)
  • 1 tablespoon miso paste
  • 2 tablespoons soy sauce
  • 1 tablespoon mirin
  • 1 tablespoon sake

Instructions

  1. Add the chicken stock, soy sauce, miso paste, mirin and sake to a medium saucepan and bring to a boil.
  2. Reduce heat and simmer for 2 minutes.
  3. Add the tofu, mushrooms, and vermicelli.
  4. Return to a boil, reduce heat, and simmer for 6 minutes.
  5. Add the green onions and simmer for another 2 minutes.
  6. Ready to serve.
