AFC Egg Tofu is made by infusing soy milk and liquid egg together.  The texture can be best compared with that of soft tofu as it is made in a similar way also using Glucono delta-lactone (GDL), an edible acid coagulant which gives the tofu its smooth tender texture.  However, this type of tofu does not have a whole lot of water concentration in it as it is comes in a vacuum sealed tube-like form.  Egg tofu can be a great appetizer on its own or served as an entree with meat and vegetables.
